Smart Packaging for Fresh-Cut Durian: A Colour Change Is Not a Freshness Guarantee

A review published on 24 March 2026 maps progress in durian packaging, from aroma barriers and modified atmospheres to ripeness indicators. Commercial use still requires validation for cultivar, ripeness, pack size, temperature and the real decision point. This article introduces a six-layer Smart Pack Validation File without turning an indicator colour into a safety certification or expiry date.

1. Smart packaging is not one single function

A Packaging Technology and Science review published on 24 March 2026 describes multiple durian-packaging needs, including quality preservation, aroma management, storage and ripeness indication. The first question is therefore what a pack is intended to measure or change.

Active packaging interacts with the pack environment, while intelligent packaging provides information about the food or pack condition. Neither term is, by itself, a quality certification, safety approval or shelf-life claim.

2. Colour is a signal, not an independent test result

Primary Food Control research developed a starch/chitosan pH-dye ripeness label for fresh-cut durian. It demonstrates the potential of a prototype under the studied conditions; it does not mean every indicator reads ripeness in the same way.

Each colour state must be calibrated against an appropriate physical, chemical, sensory or microbiological reference for the intended decision. False positives, false negatives and indeterminate zones also need to be recorded.

3. A modified atmosphere must match product respiration

A 2024 Food Packaging and Shelf Life study evaluated an oxygen/carbon-dioxide modifying system for packaged fresh-cut durian. It illustrates why gas exchange and changes in the product must be designed together.

A film, scavenger or gas condition from a study should not be copied directly without validation for pulp weight, headspace, respiration, actual temperature and route duration.

4. The six-layer Smart Pack Validation File

One, Intended Use: product, cultivar, ripeness, pack size, route and user. Two, Food-contact Compliance: substrate, ink, adhesive and any food-contact component. Three, Reference Method: the method used to compare ripeness, quality and safety.

Four, Challenge Study: expected temperature, light, time and operational variation. Five, Decision Rule: how a state triggers Accept, Hold, Recheck or Reject. Six, Change Control: whether a supplier, film, formula, format or route change requires revalidation.

5. Safety and shelf life still require accountable evidence

Thai FDA lists Ministry of Public Health Notification No. 435 B.E. 2565 (2022) for plastic food packaging, while Codex CXC 53-2003 provides hygienic context for fresh fruit and vegetables, including cutting and packing. An intelligent label does not remove those obligations.
